By adding value to some by-products of their production, such as excess mushrooms (making jerky, garum, or drying), or also producing BioChar with spent substrate, the team manages to reduce their impact on the environment. 

  • Southland Mushrooms repurpose Lorneville wood sawdust and Bluff oyster shells by adding them to the mushroom growing medium. It gives their mushrooms a unique profile from Southland, while also helping them to grow nutrient-dense food.
