Southland Mushrooms try to avoid waste and to be as sustainable as possible. By adding value to some by-products of their production, such as excess mushrooms (making jerky, garum, or drying), or also producing BioChar with spent substrate, the team manages to reduce their impact on the environment.
Southland Mushrooms repurpose Lorneville wood sawdust and Bluff oyster shells by adding them to the mushroom growing medium. It gives their mushrooms a unique profile from Southland, while also helping them to grow nutrient-dense food.
